tomato and minced beef slice

I  feel I need to share a recipe at this point, it’s been quite some time since I shared what I’ve eaten on my blog; today I made some meatloaf. It’s a rich, spicy ‘loaf’ kept nice and moist with the addition of a layer of fresh plum tomatoes. Served with roast potatoes and a green salad... it was just divine! I usually make it in a loaf tin, but this time I wanted to serve it as a ‘wedge’... I found it looked much nicer on the plate...

Tomato and Minced Beef Slice Recipe

Serves around 4 people

500g lean beef mince
1 finely chopped onion
2 crushed garlic cloves
1 tsp cumin
salt and pepper
3 sliced tomatoes
2 eggs
sunflower oil

1. Preheat the oven to 200C.

2. Place the onions in a pan with a little sunflower oil, and fry them gently until they are slightly caramelised. Leave aside to cool while you prepare the meat mixture.

3. Put the rest of the ingredients, except the tomatoes, in a large bowl and mix until all the ingredients are integrated; don’t forget the onions!

4. Lightly grease a dish (I used a glass pyrex cake dish) and place half of the meat mixture into the dish. Flatten the surface so that it is smooth and even.

5. Put the tomato slices on top in an even layer, and then top with the other half of the meat mixture.

Cover with foil and bake in the oven for 45 minutes, uncover, and bake for a further 30 minutes.
